Owner Heidi Henry shared that she has lived with celiac disease for close to 20 years. Because of that, she wanted a place where guests do not have to worry about cross-contact. That is why the kitchen is 100% gluten-free.
Henry explained that she built the concept to focus on clean eating and food allergies. She is also a nurse, and the restaurant was designed so guests can watch food being prepared and grilled.
